Chef Will Eaglesfield

London-born Will Eaglesfield is the Executive Chef for Queenstown icon Eichardt’s Private Hotel as well as The Spire Hotel. Will brings British, European and Mediterranean influences to his menus, having spent years in the Med and French Alps learning his craft.

Since moving to Queenstown in 2007 he has sought out and built solid relationships with high-quality local producers, giving him access to their finest produce and unusual products. Often to be found on his mountain bike exploring the area, he always has an eye open for wild mushrooms, berries and other treats which he uses in his dishes to give an authentic “terroir;” the unique flavour of the region in which the food is grown.

His latest project is the opening of The Grille by Eichardts, where he will be serving classic French brasserie food with contemporary techniques and presentation, and an emphasis on grilled and smoked dishes. As usual he is sourcing his game, meat and produce from local farmers and hunters, and has set up an organic vegetable garden to grow herbs and produce for the kitchen.

Out of the kitchen, he spends his time enjoying the Queenstown lifestyle of skiing, biking, kayaking, and tramping/foraging expeditions with his 18-month-old daughter, Ellie
