Chef Malcolm Redmond of Breckenridge Lodge believes great food only comes from using the freshest and highest quality ingredients.  Therefore, he oversees every step in Breckenridge’s cuisine. He organically grows nearly 90 percent of the produce served, personally purchases the proteins at the markets, and pairs New Zealand wines from his own wine cellar 30 years in the making.  He is a native New Zealander who has worked in some of the world’s best restaurants with several Michelin star chefs.
