Chef Gilles England-Brassy

Chef Gilles England-Brassy at Bay of Many Coves is French by birth, and Aussie by choice but primarily a Normand who has trained and worked under different great Chefs.

As a Chef, Bay of Many Coves is the perfect place to be, the ocean is my front door, and the vast regenerated native bush land is my back garden. I am so lucky to have an amazing gardener that brings me wheelbarrow full of homegrown and foraging delicacies, kawakawa bush basil, horopito to name a few.

The Queen Charlotte Sound and the ocean are giving us such great varieties of fish, we have Salmon and Oyster farms and of course Havelock, the Capital of Green-Lip Mussels around the corner, sea coastal fauna,  Cloudy Bay Clams, Hapuka, and our famous Blue Cod. 

What I love here is the endless possibilities I can achieve with all the great produce we have in this amazing region. The artisan and growers of the Marlborough region make my job simple, their produce are so great that I hardly have to do anything to make a joyful and memorable dish.

All of our dishes have a story and this is our DNA.
